Delicious KFC Bowl Casserole (Print version)

A cozy KFC-style casserole layered with mashed potatoes, corn, crispy chicken, cheddar, and hot gravy.

# Ingredients:

For the casserole

01 - 2 lb (900 g) prepared mashed potatoes, warmed
02 - 4 cups (560 g) frozen or canned corn, thawed and drained
03 - 1 1/2 lb (680 g) frozen popcorn chicken or chicken nuggets
04 - 2 cups (225 g) shredded cheddar cheese
05 - 1 tablespoon butter or cooking spray, for the dish

For finishing

06 - 18 oz (510 g) chicken gravy or brown gravy, warmed
07 - Salt and black pepper, to taste
08 - 2 tablespoons sliced green onions, optional

# Instructions:

01 - Preheat the oven to 400 F. Lightly grease a 9x13-inch baking dish with butter or cooking spray.
02 - Bake or air fry the popcorn chicken according to the package directions until hot and crisp. If any pieces are large, cut them into bite-size chunks.
03 - Spread the warm mashed potatoes evenly in the baking dish. Season lightly with black pepper, then scatter the drained corn over the potatoes.
04 - Bake the potato and corn layer for 10 minutes, until the edges are hot and the center is warmed through.
05 - Arrange the crisp chicken over the hot potatoes and corn. Sprinkle cheddar evenly over the top and bake for 5-7 minutes, until the cheese is melted.
06 - Spoon hot gravy over the casserole just before serving. Top with green onions if using and serve with extra gravy on the side.

# Good to know:

01 - For the crispest chicken, add it near the end of baking instead of under the gravy.
02 - Prepared mashed potatoes and jarred gravy keep this recipe quick, but leftovers work well.
