Keto Tomato Soup Bowl (Print Version)

Healthy keto tomato soup with fresh and canned tomatoes, basil, and rich flavors.

# Ingredients:

01 - 2 tablespoons olive oil
02 - 1 small carrot, diced (50g)
03 - 2 celery stalks, diced (80g)
04 - 1 small onion, diced (70g)
05 - 2 garlic cloves, minced
06 - 14 oz canned chopped tomatoes (400g)
07 - 2 cups cherry tomatoes (300g)
08 - 5 cups chicken broth (1.2 litre)
09 - ¼ cup fresh basil leaves, chopped (12g)
10 - Salt to taste
11 - Pepper to taste

→ Optional Basil Oil

12 - ¼ cup fresh basil leaves, chopped (12g)
13 - ¼ cup olive oil (60ml)
14 - Pinch of salt

# Instructions:

01 - Heat the olive oil in a large pan over medium heat. Add the diced carrot, celery, and onion, and sauté for 3 to 4 minutes until softened. Add the garlic and cook for 1 more minute until fragrant.
02 - Stir in the canned tomatoes, cherry tomatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat to a simmer. Cover partially and simmer for 10 to 15 minutes.
03 - Stir in the chopped fresh basil. Blend the soup until smooth using either a countertop blender or a hand blender. Adjust seasoning to taste.
04 - Combine basil leaves, olive oil, and a pinch of salt in a small blender or electric spice grinder. Blitz until smooth. Drizzle over the soup as desired.
