# Ingredients:

For the beef and mushrooms

01 - 1 tablespoon unsalted butter
02 - 8 oz (225 g) cremini mushrooms, sliced
03 - 1 lb (450 g) 85% lean ground beef
04 - 1/3 cup finely diced yellow onion
05 - 1 teaspoon garlic powder
06 - 3/4 teaspoon kosher salt, divided
07 - 1/2 teaspoon black pepper
08 - 1 tablespoon gluten-free Worcestershire sauce
09 - 4 slices Swiss cheese, about 4 oz (115 g)

For the bowls

10 - 4 cups (450 g) cauliflower rice, fresh or frozen
11 - 2 cups shredded romaine lettuce
12 - 1/2 cup sliced dill pickles
13 - 1/4 cup thinly sliced red onion

For the sauce

14 - 1/3 cup mayonnaise
15 - 1 tablespoon Dijon mustard
16 - 1 tablespoon dill pickle juice
17 - 1/2 teaspoon smoked paprika
18 - 1/4 teaspoon garlic powder

# Instructions:

01 - Melt the butter in a large skillet over medium-high heat. Add the mushrooms and 1/4 teaspoon salt. Cook for 6-8 minutes, stirring occasionally, until their liquid evaporates and the edges brown.
02 - Add the ground beef, yellow onion, garlic powder, remaining salt, and pepper. Cook for 7-9 minutes, breaking up the meat, until the beef is cooked through and no pink remains.
03 - Stir in the Worcestershire sauce. Reduce the heat to low, lay the Swiss slices over the beef and mushrooms, cover, and let melt for 1-2 minutes.
04 - Whisk the mayonnaise, Dijon mustard, pickle juice, smoked paprika, and garlic powder in a small bowl until smooth.
05 - Warm the cauliflower rice until steaming, then drain off any extra liquid. Season lightly if needed.
06 - Divide cauliflower rice among 4 bowls. Top with the cheesy beef and mushrooms, lettuce, pickles, red onion, and a drizzle of sauce. Serve warm.
