Keto Cottage Cheese Cloud Bread (Print Version)

# Ingredients:

→ Base

01 - 6 large eggs, separated, room temperature
02 - 4 ounces (113g) cottage cheese
03 - ½ teaspoon white vinegar or cream of tartar
04 - ½ teaspoon baking powder
05 - ¼ teaspoon salt

→ Proteins & Sweetener

06 - ¾ cup (62g) whey protein powder
07 - ¼ cup (20g) egg white protein powder
08 - 1 tablespoon allulose (optional)

→ Optional Seasonings

09 - ¼ teaspoon each garlic powder and onion powder (for savory bread)
10 - 1 teaspoon vanilla stevia (for French toast)
11 - Sesame seeds or bagel seasoning for topping

# Instructions:

01 - Preheat oven to 300°F. Line 9x5 loaf pan with parchment paper and grease.
02 - Beat egg whites with vinegar until stiff peaks form, about 10-15 minutes.
03 - Whisk egg yolks with remaining ingredients until well combined, or blend until smooth.
04 - Gradually fold egg yolk mixture into egg whites until fully incorporated.
05 - Pour into prepared pan. Bake 50 minutes until golden and toothpick comes out clean. Let rest in closed oven 10 minutes after baking.

01 - Can be made as rolls (8 rolls, 20-25 minutes baking time)
