Mix sugar, salt, and boiling water in a big pot. Bring to a boil, cover, and cook for 5 minutes.

Take off the lid, lower heat to medium, and put on a candy thermometer. Slowly add cream without stirring. Cook till it hits 260°F (127°C).

Take it off the heat and pour onto a cold, buttered marble slab. Drizzle vanilla over the candy.

Fold the edges towards the middle, flip to cool the top.

When it's cool enough to touch, cut it in half and start pulling for about 3-4 minutes until it gets lighter and shiny.

Shape into long ropes and cut into 1 1/2 inch pieces.

Cover the pieces with a clean towel and let them sit overnight to cream.
