Kentucky Cream Pull Candy (Print Version)

# Ingredients:

01 - 4 cups (800g) granulated sugar.
02 - 1 cup (240ml) boiling water.
03 - 1 cup (240ml) heavy whipping cream.
04 - 1/8 teaspoon salt.
05 - 1 teaspoon pure vanilla extract.
06 - 2 tablespoons butter, for greasing.

# Instructions:

01 - Mix sugar, salt, and boiling water in a big pot. Bring to a boil, cover, and cook for 5 minutes.
02 - Take off the lid, lower heat to medium, and put on a candy thermometer. Slowly add cream without stirring. Cook till it hits 260°F (127°C).
03 - Take it off the heat and pour onto a cold, buttered marble slab. Drizzle vanilla over the candy.
04 - Fold the edges towards the middle, flip to cool the top.
05 - When it's cool enough to touch, cut it in half and start pulling for about 3-4 minutes until it gets lighter and shiny.
06 - Shape into long ropes and cut into 1 1/2 inch pieces.
07 - Cover the pieces with a clean towel and let them sit overnight to cream.

01 - This old-fashioned candy needs a cool, dry day for best results. The pulling process is crucial for the right texture, so don't rush it. Be careful with the hot syrup, it can cause serious burns.
