Easy 4-Ingredient Jello Cookies (Print version)

Soft, fruity, colorful Jello cookies made with only 4 ingredients and a boxed sugar cookie mix.

# Ingredients:

For the cookies

01 - 1 pouch (17.5 oz / 496 g) sugar cookie mix
02 - 1/2 cup (113 g) unsalted butter, melted and cooled slightly
03 - 1 large egg
04 - 1 box (3 oz / 85 g) flavored gelatin powder, any flavor, divided

# Instructions:

01 - Heat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
02 - In a large bowl, stir together the sugar cookie mix, melted butter, and egg until a soft dough forms with no dry pockets.
03 - Reserve 1 tablespoon of gelatin powder for rolling, if desired. Mix the remaining gelatin powder into the dough until evenly colored.
04 - Scoop tablespoon-size portions and roll into balls. Lightly roll the balls in the reserved gelatin powder for extra color, then set them 2 inches apart on the baking sheets.
05 - Bake for 9-11 minutes, until the edges are set and the tops look puffed. Do not wait for browning, or the cookies may dry out.
06 - Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
