Spicy Hot Honey Fried Chicken Sandwich (Print version)

Crispy fried chicken with a sticky hot honey glaze, spicy mayo, and dill pickles on a buttered brioche bun. Sweet, spicy, and crunchy.

# Ingredients:

For the chicken

01 - 1 lb (450 g) boneless, skinless chicken breasts, pounded to 1/2 inch thick
02 - 3/4 cup (180 ml) buttermilk
03 - 1 large egg
04 - 2 tablespoons hot sauce (such as Louisiana or Frank's)
05 - 1 1/2 cups (190 g) all-purpose flour
06 - 1 teaspoon paprika
07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1/2 teaspoon cayenne pepper
10 - 1 teaspoon salt
11 - 1/2 teaspoon black pepper
12 - 3 cups (720 ml) vegetable or peanut oil, for frying

For the hot honey glaze

13 - 1/3 cup (115 g) honey
14 - 2 tablespoons unsalted butter
15 - 1-2 tablespoons hot sauce

For the spicy mayo

16 - 1/2 cup (120 g) mayonnaise
17 - 1-2 teaspoons hot sauce or sambal oelek

For assembly

18 - 4 brioche buns
19 - 2 tablespoons butter, for toasting
20 - 16-20 bread-and-butter pickle slices
21 - shredded lettuce (optional)

# Instructions:

01 - Pound chicken to an even half-inch thickness. Whisk buttermilk, egg, and hot sauce in a large bowl. Submerge the chicken, cover, and refrigerate for at least 1 hour or up to overnight.
02 - Mix flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper in a shallow bowl. Remove chicken from the marinade, let excess drip off, then press firmly into the flour mixture until fully coated. Rest on a wire rack for 10 minutes.
03 - Heat oil to 350°F in a heavy skillet or Dutch oven. Fry the chicken in batches for 5-6 minutes, turning once, until deep golden brown and the internal temperature reaches 165°F. Transfer to a clean wire rack to drain.
04 - Warm honey, butter, and hot sauce in a small saucepan over low heat until fluid, about 30 seconds. Brush the glaze generously over the hot fried chicken so it soaks into the crust.
05 - Stir mayonnaise with hot sauce or sambal oelek in a small bowl until smooth.
06 - Toast the brioche buns in butter until golden. Spread spicy mayo on the cut sides of each bun. Layer pickles, the glazed chicken, and lettuce if using. Close the sandwiches and serve immediately.
