# Ingredients:

For the patties

01 - 1 lb (450 g) breakfast pork sausage
02 - 2 medium jalapenos, seeded and finely diced
03 - 1/3 cup finely diced yellow onion
04 - 3/4 cup (85 g) shredded sharp cheddar cheese
05 - 1 large egg
06 - 1/4 cup (28 g) almond flour
07 - 1 teaspoon garlic powder
08 - 1/2 teaspoon smoked paprika
09 - 1/4 teaspoon crushed red pepper flakes, optional
10 - 1/4 teaspoon black pepper

For cooking

11 - 1 tablespoon olive oil, plus more if needed

# Instructions:

01 - Add the sausage, jalapenos, onion, cheddar, egg, almond flour, garlic powder, smoked paprika, red pepper flakes, and black pepper to a large bowl. Mix gently until evenly combined.
02 - Cover and refrigerate for 15 minutes. This helps the almond flour absorb moisture and makes the patties easier to shape.
03 - Divide the mixture into 8 equal patties about 1/2 inch thick. Press a shallow dimple in the center of each patty so they cook evenly.
04 - Heat the olive oil in a large skillet over medium heat. Add the patties in batches and cook for about 4 minutes, until the bottoms are well browned.
05 - Flip the patties and cook for 3-5 minutes more, until browned on both sides and the center reaches 160°F.
06 - Transfer the patties to a plate and rest for 3 minutes before serving. Serve warm with eggs, biscuits, potatoes, or a breakfast sandwich.
