Jalapeño Bottle Caps (Print Version)

# Ingredients:

01 - 3 fresh jalapeño peppers, sliced into rings.
02 - ½ cup all-purpose flour.
03 - ½ teaspoon garlic powder.
04 - ½ teaspoon paprika.
05 - Salt and pepper to taste.
06 - 2 large eggs.

08 - 2 to 3 cups peanut or vegetable oil (enough to cover the battered jalapeño peppers).

# Instructions:

01 - Heat 2 to 3 cups of peanut or vegetable oil in a large pan over medium heat. Make sure the oil is hot, but do not let it boil.
02 - In a large mixing bowl, combine the flour, garlic powder, paprika, salt, and pepper. Mix well.
03 - Crack the eggs into the dry mixture and beat until smooth, creating a batter.
04 - Stir in the light beer (or fizzy seltzer or clear soda) to the batter, mixing until well combined.
05 - In batches, coat the sliced jalapeño rings in the batter, ensuring each ring is well coated.
06 - Carefully fry the battered jalapeño rings in the hot oil in batches for about 5-6 minutes, turning them as needed, until they are golden brown and crispy.
07 - Remove the fried jalapeño bottle caps from the oil and place them on paper towels to drain. Lightly salt while they are still hot.
08 - Serve the crispy jalapeño bottle caps immediately.
