Italian Wedding Cookies (Print Version)

# Ingredients:

01 - 5 ounces roasted salted almonds.
02 - 5 tablespoons sugar, divided.
03 - 3/4 cup unsalted butter, softened.
04 - 1 teaspoon vanilla extract.
05 - 1 1/2 cups all-purpose flour.
06 - 1/4 teaspoon kosher salt.
07 - 4 cups powdered sugar for coating.

# Instructions:

01 - Preheat oven to 325°F. Line baking sheets with parchment.
02 - Process almonds with 1 tablespoon sugar until finely ground.
03 - Beat butter, remaining sugar and vanilla until fluffy, about 3 minutes.
04 - Mix in flour and salt, then add ground almond mixture until combined.
05 - Roll into 3/4-inch balls and place 1-inch apart on baking sheets.
06 - Bake 22-26 minutes until bottoms are light golden, rotating pan halfway.
07 - Cool 3 minutes then roll warm cookies in powdered sugar.
08 - Once completely cool, roll in powdered sugar again.

01 - Can freeze dough balls for freshly baked cookies.
02 - Roll in sugar while still warm for best coating.
03 - Store up to 1 week in airtight container.
