Preheat oven to 325°F. Line baking sheets with parchment.

Process almonds with 1 tablespoon sugar until finely ground.

Beat butter, remaining sugar and vanilla until fluffy, about 3 minutes.

Mix in flour and salt, then add ground almond mixture until combined.

Roll into 3/4-inch balls and place 1-inch apart on baking sheets.

Bake 22-26 minutes until bottoms are light golden, rotating pan halfway.

Cool 3 minutes then roll warm cookies in powdered sugar.

Once completely cool, roll in powdered sugar again.
