Italian Pesto Chicken Panini (Print Version)

# Ingredients:

β†’ Base

01 - 4 slices Italian bread, thickly sliced
02 - 1 chicken breast, cooked and sliced lengthwise in half

β†’ Spreads & Fillings

03 - 2 tablespoons pesto
04 - 2 tablespoons red onion, slivered
05 - ΒΌ cup roasted red peppers, thinly sliced
06 - 4 ounces low moisture, part skim mozzarella

β†’ For Cooking

07 - Cooking spray

# Instructions:

01 - Spread pesto generously on two slices of bread.
02 - Top each with chicken half, then divide red onion, red peppers, and mozzarella between sandwiches. Top with remaining bread.
03 - Heat panini press and coat with cooking spray.
04 - Grill sandwiches 3-4 minutes per side until heated through and cheese melts.
05 - Cut in half and serve hot.
