Italian Basil Butter Chicken (Print Version)

# Ingredients:

→ Main

01 - 4 chicken breasts with skin
02 - ½ cup fresh basil, chopped
03 - 1-2 cloves garlic, finely minced

→ Seasonings & Fats

04 - 3 tablespoons butter, softened
05 - 1-2 tablespoons olive oil
06 - ¼ teaspoon salt, plus more for sprinkling
07 - Black pepper to taste

→ Citrus

08 - 3-4 thin lemon slices
09 - 1-2 teaspoons lemon juice

# Instructions:

01 - Mix chopped basil, minced garlic, salt, pepper and softened butter in small bowl. Refrigerate 15 minutes until firm.
02 - Gently lift skin from chicken breasts and spread basil butter mixture evenly underneath.
03 - Drizzle skillet with olive oil, arrange lemon slices, place chicken bone-side down. Add lemon juice and seasonings.
04 - Cover and cook on low/medium 25-30 minutes until liquid evaporates. Raise heat and flip to brown well on other side.
05 - Flip chicken back over, garnish with chopped basil and serve. Chicken is done at 165°F.
