Irish Pub Burgers with Whiskey Aioli (Print Version)

# Ingredients:

→ Whiskey Aioli

01 - 2 tablespoons mayonnaise
02 - ½ tablespoon Irish whiskey (or substitute lemon juice)
03 - 1 small garlic clove, pressed or finely minced
04 - ⅛ teaspoon paprika
05 - Sea salt and pepper to taste

→ Grilled Onions

06 - 1 tablespoon olive oil
07 - 1 small sweet yellow onion, thinly sliced

→ Burgers

08 - 1 pound ground beef (85% lean recommended)
09 - 2 ounces cheddar cheese, grated or sliced
10 - 2 slices thick-cut bacon, cooked and halved
11 - 2 hamburger buns
12 - Sea salt and pepper to taste

# Instructions:

01 - Mix mayonnaise, whiskey, garlic, salt, pepper and paprika in small bowl. Refrigerate until serving.
02 - Heat oil in large non-stick skillet over medium heat. Cook onions 5-7 minutes until golden brown, stirring occasionally.
03 - Form beef into patties, season with salt and pepper. Cook over medium heat until done. Top with cheese and let melt.
04 - Place cheeseburger on bottom bun, top with bacon, grilled onions, and whiskey aioli. Add top bun.

# Notes:

01 - Can substitute lemon juice for whiskey in aioli
02 - Recipe easily doubles or triples
03 - Can use smoked paprika for smokier flavor
04 - Optional: add butter to onions for extra flavor
