Preheat the oven to 375 degrees Fahrenheit.

In a large skillet, heat the butter until melted and slightly frothy.

Add the diced onion and sauté until fragrant and beginning to turn translucent, about 2-3 minutes.

Stir in the shredded cabbage and combine with the onions. Season with sea salt. Cook for about 5-6 minutes or until the cabbage softens and begins to turn lightly golden in spots.

Add the minced garlic and cook for about a minute. Remove the skillet from heat and let the mixture cool slightly.

Mix the frozen hash browns and 1½ cups of shredded Irish cheddar into the skillet until well-combined. Smooth the surface with a spatula.

Bake in the preheated oven for about 30-35 minutes or until the top begins to turn golden brown.

Top with the remaining cheese and bake for another 4-5 minutes until the cheese is melted and bubbly.
