Crispy Hot Honey Feta Chicken (Print Version)

# Ingredients:

→ Hot Honey

01 - 1/3 cup (110g) honey
02 - 1 1/2 teaspoons hot sauce (Frank's or Cholula)
03 - 3/4 teaspoon chilli flakes

→ Chicken Seasoning

04 - 2 teaspoons paprika
05 - 1 teaspoon salt
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon dried oregano
09 - 1/2 teaspoon black pepper
10 - 1/4 teaspoon cayenne pepper

→ Main Ingredients

11 - 2 chicken breasts (250g/9oz each)
12 - 1/4 cup (35g) plain flour
13 - 2 eggs, beaten
14 - 1 cup (65g) panko breadcrumbs
15 - 7oz (200g) feta, crumbled
16 - 6-8 tablespoons vegetable oil, for frying

# Instructions:

01 - Mix honey, hot sauce, and chili flakes in a bowl. Warm in microwave for 20 seconds or on stovetop until simmering. Let cool.
02 - Slice chicken breasts horizontally to create 4 even pieces. Mix all seasonings in a bowl.
03 - Prepare three dishes: first with flour and half the seasoning, second with beaten eggs, third with panko and remaining seasoning. Coat chicken pieces in order.
04 - Heat oil in large pan over medium-high heat. Fry chicken 3-4 minutes per side until golden and cooked through.
05 - Top chicken with crumbled feta and broil until golden. Drizzle with hot honey before serving.

# Notes:

01 - Can be baked instead of fried at 430°F for 18-20 minutes
02 - Hot honey can be made ahead and stored in refrigerator
03 - Serves well with potato wedges and arugula
