Spread peanut butter on four bread slices. Stack two buttered slices together and top with plain slice. Repeat for second sandwich.

Cut off crusts to make squares.

Lightly dip sandwiches in beaten eggs, being careful not to oversoak. Stand vertically while preparing to fry.

Heat oil over low-medium heat (300°F). Fry each sandwich on all sides until golden brown - 30 seconds on edges, 1-2 minutes on larger sides.
