Honey Peach White Cheddar Grilled Cheese (Print version)

A crisp sourdough grilled cheese layered with ripe peaches, sharp white cheddar, creamy ricotta, honey, and basil.

# Ingredients:

For the sandwiches

01 - 4 slices sourdough bread, about 1/2 inch thick
02 - 3 tablespoons (45 g) unsalted butter, softened
03 - 4 oz (115 g) sharp white cheddar cheese, shredded or thinly sliced
04 - 3 tablespoons (45 g) whole-milk ricotta cheese
05 - 1 large ripe peach, washed, pitted, and thinly sliced
06 - 1 tablespoon honey
07 - 6 fresh basil leaves, torn
08 - 1/8 teaspoon freshly ground black pepper
09 - Pinch of fine salt, optional

# Instructions:

01 - Slice the peach thinly and blot the slices with a paper towel. This keeps the sandwich from turning soggy and helps the filling stay in place.
02 - Spread softened butter over one side of each slice of sourdough, making sure the butter reaches the edges.
03 - Set 2 bread slices buttered side down. Add half the cheddar, the peach slices, honey, ricotta, basil, black pepper, and a tiny pinch of salt if using. Top with the remaining cheddar and bread, buttered side up.
04 - Heat a skillet over medium-low heat. Add the sandwiches and cook for 3-4 minutes, until the bottom is deeply golden and crisp.
05 - Flip carefully with a wide spatula. Cook for 3-4 minutes more, lowering the heat if the bread browns too quickly. Cover the skillet for the final minute if the cheese needs more time to melt.
06 - Transfer the sandwiches to a board and rest for 1 minute. Slice in half and serve hot while the cheddar is soft and creamy.

# Good to know:

01 - Best eaten right after cooking while the sourdough is crisp.
02 - Use thin peach slices so the sandwich warms through evenly.
03 - Hot honey can replace plain honey for a spicy version.
