Honey Glazed Acorn Squash (Print Version)

Acorn squash caramelized with honey, paired with goat cheese and cranberry drizzle for sweet-savory flavor.

# Ingredients:

01 - 2 small acorn squashes, halved, seeds removed
02 - Fresh thyme or parsley, for garnish

03 - 120 grams creamy goat cheese

→ Pantry

04 - 2 tablespoons olive oil
05 - 2 tablespoons honey
06 - Salt, to taste
07 - Freshly ground black pepper, to taste
08 - 60 milliliters cranberry sauce or compote

# Instructions:

01 - Preheat the oven to 200°C.
02 - Cut acorn squashes in half lengthwise and scoop out the seeds.
03 - Brush cut sides of squash halves with olive oil and honey. Season with salt and freshly ground black pepper.
04 - Arrange squash halves cut side up on a baking tray. Roast in the oven for 25 to 30 minutes until flesh is tender and edges are caramelized.
05 - Allow roasted squash to cool slightly. Fill cavities with creamy goat cheese.
06 - Drizzle with cranberry sauce and garnish with fresh thyme or parsley before serving.
