Crispy baked jerk chicken wings tossed in a sticky honey garlic glaze with warm spice, fresh garlic, and a little heat.

# Ingredients:

For the wings

01 - 2 1/2 lb (1.1 kg) split chicken wings, flats and drumettes
02 - 1 tablespoon neutral oil
03 - 2 tablespoons dry jerk seasoning, plus more to taste
04 - 2 teaspoons aluminum-free baking powder
05 - 1/2 teaspoon kosher salt, or less if the jerk seasoning is salty
06 - 1/2 teaspoon black pepper
07 - Cooking spray for the rack

For the honey garlic glaze

08 - 2 tablespoons unsalted butter
09 - 5 garlic cloves, minced
10 - 1/3 cup (115 g) honey
11 - 1 tablespoon gluten-free tamari
12 - 1-2 teaspoons hot sauce, to taste
13 - 1/2 teaspoon ground ginger
14 - 1/2 teaspoon smoked paprika
15 - 1 tablespoon fresh lime juice
16 - 2 scallions, thinly sliced
17 - Lime wedges, for serving

# Instructions:

01 - Heat the oven to 425 F. Line a rimmed sheet pan with foil or parchment, set a wire rack on top, and coat the rack lightly with cooking spray.
02 - Pat the wings very dry. Toss them with oil, jerk seasoning, baking powder, salt, and pepper until evenly coated.
03 - Arrange the wings in a single layer on the rack. Bake for 38-45 minutes, flipping halfway, until browned, crisp at the edges, and cooked through.
04 - While the wings bake, melt the butter in a small saucepan over medium-low heat. Add the garlic and cook for 30-45 seconds until fragrant. Stir in honey, tamari, hot sauce, ginger, paprika, and lime juice. Simmer for 3-4 minutes until glossy and slightly thick.
05 - Transfer the hot wings to a large bowl. Pour over most of the warm glaze and toss until every wing is coated.
06 - Return the glazed wings to the rack and bake for 5-7 minutes until sticky and shiny. Brush with remaining glaze, sprinkle with scallions, and serve with lime wedges.

# Good to know:

01 - Best served hot, right after the glaze sets.
02 - For air fryer wings, cook at 400 F for 18-22 minutes, then glaze and cook 3-5 minutes more.
03 - Check that your jerk seasoning and tamari are certified gluten-free if needed.
