Southern Honey Butter Cornbread Poppers (Print Version)

# Ingredients:

→ Poppers

01 - 1 cup (120g) cornmeal
02 - 1 cup (125g) all-purpose flour
03 - ¼ cup (50g) granulated sugar
04 - 1 tablespoon baking powder
05 - ½ teaspoon salt
06 - 1 cup (240ml) buttermilk
07 - ¼ cup (60ml) vegetable oil
08 - 1 large egg

→ Honey Butter Glaze

09 - ¼ cup (60g) unsalted butter, melted
10 - 2 tablespoons honey
11 - ¼ teaspoon salt

# Instructions:

01 - Preheat oven to 400°F (200°C). Grease mini muffin tin or prepare silicone molds.
02 - Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
03 - In separate bowl, whisk together buttermilk, vegetable oil, and egg.
04 - Gradually add wet ingredients to dry ingredients, stirring until just combined.
05 - Spoon batter into prepared mini muffin tin, filling each ¾ full. Bake 10-12 minutes until golden and toothpick comes out clean.
06 - Whisk together melted butter, honey, and salt in small bowl.
07 - While poppers are still warm, brush generously with honey butter glaze. Serve warm.
