Preheat the oven to 425°F. Line a large baking sheet with parchment paper.

In a bowl, stir together the mozzarella, chopped pepperoni, parmesan, and Italian seasoning. Keep the pizza sauce separate.

Lightly flour the counter and divide the dough into 8 pieces. Roll each piece into a 5-inch circle, resting the dough for a few minutes if it springs back.

Spread about 2 teaspoons pizza sauce on one half of each circle, leaving a clean 1/2-inch border. Add about 3 tablespoons of the cheese filling.

Fold the dough over the filling and press the edges closed. Crimp with a fork, then cut a small slit in the top of each pocket.

Move the pockets to the baking sheet and brush with egg wash. Bake for 15-18 minutes, until puffed, deeply golden, and dry at the seams.

Stir the melted butter with the grated garlic and brush it over the hot pockets. Sprinkle with parsley if using, then rest for 5 minutes before serving.
