Easy Cheesy Mashed Potato (Print Version)

Golden potato bites packed with cheddar and a smooth, cheesy inside. Great for any snack table or dinner side.

# Ingredients:

→ Mashed Potato Base

01 - Salt to taste
02 - 1/4 teaspoon ground black pepper
03 - 1/2 teaspoon garlic powder
04 - 1/4 cup chopped green onions or chives
05 - 1/4 cup milk or cream
06 - 1 cup shredded cheddar cheese
07 - 2 large eggs
08 - 2 cups chilled leftover mashed potatoes

→ For Preparing the Pan

09 - Butter, or any nonstick spray, just to grease

# Instructions:

01 - Crank your oven up to 400°F. Make sure every muffin well gets a good slick of butter or a spritz of nonstick spray. Don’t skip this or everything sticks.
02 - Toss mashed potatoes into a big bowl. Drop in your eggs, pour in milk or cream, sprinkle in cheddar, and toss in those green onions or chives. Add garlic powder. Grind in some pepper and add a little salt. Mix everything until it’s smooth and comes together.
03 - Scoop the potato mixture into the muffin tin. Fill each space almost up to the top. Level out the tops gently with the back of a spoon.
04 - Pop that tray in the oven for 25 to 30 minutes. The tops should get crispy and golden. Let them hang out in the pan about five minutes. If they’re not popping out, slide a knife around the edges to help loosen them.
05 - Dish up these potato puffs while they're still warm. Try more cheese, ketchup, or a dollop of sour cream on top if you're in the mood.

# Notes:

01 - If you use cold mashed potatoes from last night's dinner, everything comes together quick and the puffs turn out extra creamy.
