Place the bacon strips in a cold skillet and bring the heat to medium. Cook for 6 to 8 minutes, flipping once, until crispy. Transfer to a paper towel. Carefully spoon off the rendered fat, reserving 2 tablespoons.

Heat the reserved bacon fat in a medium pot over medium heat. Add the diced onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. Add the garlic and cumin and stir for 1 minute until fragrant.

Pour in the drained pinto beans and the stock. Stir to combine and bring the pot to a gentle simmer.

Cook over medium-low heat for 12 to 15 minutes, stirring occasionally, until the beans are very soft and have absorbed most of the liquid.

Use a potato masher to mash the beans to your preferred consistency, chunky or smooth. Add stock or water a tablespoon at a time to loosen if needed.

Roughly chop or crumble the cooked bacon and stir it into the beans. Taste and adjust salt. Serve warm.
