01 -
Preheat the oven to 400°F. Lightly grease four oven-safe bowls, ramekins, or a small baking dish.
02 -
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, garlic, Italian seasoning, salt, and pepper. Cook for 6-7 minutes, breaking the meat into small crumbles, until it reaches 165°F and no pink remains.
03 -
Add the bell pepper and mushrooms to the skillet. Cook for 4-5 minutes, stirring often, until softened and most of the moisture has cooked off.
04 -
Stir the marinara and cottage cheese together in a bowl. For a smooth sauce, blend the cottage cheese before mixing it with the marinara.
05 -
Divide the turkey and vegetable mixture among the prepared bowls. Spoon the cottage cheese marinara over each one, then top with mozzarella, turkey pepperoni, parmesan, and red pepper flakes if using.
06 -
Bake for 10-12 minutes, until the sauce is hot and the cheese is melted. Broil for 1-2 minutes if you want browned cheese and crisp pepperoni edges.
07 -
Let the bowls rest for 5 minutes before serving. Finish with basil or parsley and eat while warm.
