High-Protein Cottage Cheese Pizza Bake (Print version)

A cheesy, high-protein cottage cheese pizza bake with a tender egg base, marinara, mozzarella, and crisp pepperoni.

# Ingredients:

For the cottage cheese base

01 - 2 cups (450 g) 2% cottage cheese, drained if watery
02 - 4 large eggs
03 - 1/2 cup (50 g) finely grated Parmesan cheese
04 - 1/3 cup (34 g) almond flour
05 - 1 teaspoon baking powder
06 - 1 teaspoon Italian seasoning
07 - 1/2 teaspoon garlic powder
08 - 1/4 teaspoon fine salt
09 - 1/4 teaspoon black pepper

For the pizza topping

10 - 2/3 cup (165 g) thick pizza sauce
11 - 1 1/2 cups (170 g) shredded part-skim mozzarella cheese
12 - 2 oz (55 g) turkey pepperoni slices
13 - 1/3 cup (45 g) diced bell pepper, patted dry
14 - 2 tablespoons sliced black olives
15 - 1 tablespoon chopped fresh basil or parsley

# Instructions:

01 - Heat the oven to 375°F. Line an 8-inch square baking pan with parchment paper and lightly coat it with cooking spray.
02 - Add cottage cheese, eggs, Parmesan, almond flour, baking powder, Italian seasoning, garlic powder, salt, and pepper to a blender. Blend until mostly smooth, scraping down the sides if needed.
03 - Pour the mixture into the prepared pan and spread it evenly. Bake for 22-25 minutes, until puffed, lightly golden at the edges, and set in the center.
04 - Remove the pan from the oven. Spread pizza sauce over the base in a thin layer, then top with mozzarella, turkey pepperoni, bell pepper, and olives.
05 - Return the pan to the oven and bake for 12-15 minutes, until the cheese is melted and bubbling. Broil for 1-2 minutes if you want more browning, watching closely.
06 - Let the pizza bake rest for 10 minutes. Lift it from the pan with the parchment, sprinkle with basil or parsley, and cut into 4 servings.
