Preheat your oven to 375°F. Line a baking sheet with parchment paper to prevent sticking and set aside. Unwrap all your Hershey's Kisses so they're ready to go when you need them.

In a large mixing bowl, beat together the sugar and softened butter until light and fluffy. Add in the egg and vanilla, then mix until everything is well combined and smooth.

In a separate bowl, whisk together the flour and baking soda. Gradually add this dry mixture to your wet ingredients, mixing until a soft cookie dough forms.

Roll the dough into 1-inch balls using your hands. Roll each ball in your bright colored sanding sugar until completely coated, then place them on your prepared baking sheet, leaving some space between each cookie.

Slide your cookies into the preheated oven and bake for exactly 7 minutes. They should be just set but not browned.

Working quickly, remove the cookies from the oven and immediately press an unwrapped Hershey's Kiss into the center of each warm cookie. The heat from the cookie will slightly melt the bottom of the Kiss, helping it stick.

Allow the cookies to cool completely on the baking sheet until the Hershey's Kisses firm up again. Otherwise, you'll have chocolate smears when you try to move them!
