Colorful Hershey Kiss Cookies (Print version)

Soft sugar cookies rolled in bright sanding sugar and topped with chocolate kisses while warm.

# Ingredients:

For the cookie dough

01 - 3/4 cup (170 g) unsalted butter, softened
02 - 1 cup (200 g) granulated sugar
03 - 1 large egg
04 - 1 teaspoon vanilla extract
05 - 2 1/4 cups (280 g) all-purpose flour
06 - 1 teaspoon baking soda
07 - 1/4 teaspoon fine salt

For decorating

08 - 1/2 cup colored sanding sugar, assorted colors
09 - 24 Hershey's Kisses milk chocolates, unwrapped

# Instructions:

01 - Preheat the oven to 375°F. Line two baking sheets with parchment paper and unwrap the chocolate kisses.
02 - Beat the softened butter and granulated sugar for 2-3 minutes, until creamy and lighter in color. Mix in the egg and vanilla.
03 - Whisk the flour, baking soda, and salt in a separate bowl. Add to the butter mixture and mix on low just until a soft dough forms.
04 - Scoop tablespoon portions of dough and roll into smooth balls. Roll each ball in colored sanding sugar and place 2 inches apart on the baking sheets.
05 - Bake for 7-8 minutes, until the cookies are puffed and the edges are set but not browned.
06 - Immediately press one Hershey's Kiss into the center of each warm cookie. Let the cookies cool on the baking sheet for 10 minutes before moving to a rack.

# Good to know:

01 - Makes about 24 cookies.
02 - Best texture comes from baking until just set, not browned.
03 - Cool fully before stacking so the chocolate keeps its shape.
