Delicious and Healthy Cookies Without Sugar or Flour (Print version)

Soft banana oat cookies made without flour or added sugar, ready in 25 minutes with three pantry staples.

# Ingredients:

For the cookies

01 - 2 large ripe bananas, mashed (about 1 cup)
02 - 1/2 cup (130 g) natural peanut butter, stirred well
03 - 1 cup (90 g) rolled oats (certified gluten-free if needed)
04 - 1/2 teaspoon ground cinnamon
05 - 1 teaspoon pure vanilla extract
06 - 1/4 teaspoon fine sea salt
07 - 1/4 cup mini dark chocolate chips or raisins (optional)

# Instructions:

01 - Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
02 - In a large bowl, mash the bananas until mostly smooth. Stir in the peanut butter, vanilla, and salt until fully combined.
03 - Add the oats and cinnamon. Fold until the oats are evenly coated and the dough looks thick and sticky.
04 - Scoop about 1 tablespoon of dough per cookie onto the prepared baking sheet. Flatten each mound slightly with the back of the spoon.
05 - Bake for 12 to 14 minutes, until the edges look set and the tops are lightly golden. Cool on the pan for 5 minutes, then transfer to a wire rack.

01 - Best when bananas are very ripe with brown spots.
02 - Cookies stay soft and moist. Refrigerate after day one.
03 - Optional add-ins should total no more than 1/4 cup to keep the dough together.
