Preheat oven to 245°C. Set grill to medium-high heat.

Brush chicken breasts with olive oil and season with salt and black pepper. Grill until fully cooked, brushing with barbecue sauce during the last 3 minutes of grilling. Remove and allow to rest.

In a small bowl, whisk together remaining olive oil and minced garlic. Brush mixture evenly over pizza dough. Let dough rest for 10 minutes at room temperature.

Cut rested grilled chicken into bite-sized cubes.

Place dough on a baking tray or pizza stone. Brush with remaining barbecue sauce, leaving a 2 cm border. Evenly distribute mozzarella, grilled chicken, bacon, pineapple, sliced red onion, and black pepper.

Transfer pizza to preheated oven. Bake for 11–13 minutes, or until crust is golden and cheese is bubbling.

Remove pizza from oven, sprinkle with fresh chopped cilantro, slice, and serve immediately.
