Hawaiian BBQ Chicken Pizza (Print Version)

Grilled chicken, tangy barbecue, pineapple and bacon served on a cheesy, golden homemade crust.

# Ingredients:

→ Base

01 - 1 ball pizza dough (approximately 250 grams)

→ Protein

02 - 2 boneless skinless chicken breasts (about 300 grams total)
03 - 2 slices streaky bacon (about 40 grams), cooked and chopped

→ Sauce

04 - 75 millilitres barbecue sauce (plus extra for basting)
05 - 2 tablespoons olive oil

→ Cheese

06 - 120 grams mozzarella, grated

→ Toppings

07 - 100 grams fresh pineapple, diced
08 - 1/2 small red onion, thinly sliced (about 40 grams)
09 - 2 tablespoons fresh cilantro, chopped
10 - 2 garlic cloves, minced
11 - 1/2 teaspoon freshly ground black pepper

# Instructions:

01 - Preheat oven to 245°C. Set grill to medium-high heat.
02 - Brush chicken breasts with olive oil and season with salt and black pepper. Grill until fully cooked, brushing with barbecue sauce during the last 3 minutes of grilling. Remove and allow to rest.
03 - In a small bowl, whisk together remaining olive oil and minced garlic. Brush mixture evenly over pizza dough. Let dough rest for 10 minutes at room temperature.
04 - Cut rested grilled chicken into bite-sized cubes.
05 - Place dough on a baking tray or pizza stone. Brush with remaining barbecue sauce, leaving a 2 cm border. Evenly distribute mozzarella, grilled chicken, bacon, pineapple, sliced red onion, and black pepper.
06 - Transfer pizza to preheated oven. Bake for 11–13 minutes, or until crust is golden and cheese is bubbling.
07 - Remove pizza from oven, sprinkle with fresh chopped cilantro, slice, and serve immediately.

01 - Allow the pizza to cool slightly before slicing for clean portions.
