# Ingredients:

For the pumpkin juice

01 - 4 cups (960 ml) apple cider or unfiltered apple juice
02 - 1 cup (240 g) plain pumpkin puree
03 - 1 cup (240 ml) apricot nectar
04 - 2-3 tablespoons maple syrup, to taste
05 - 1 tablespoon fresh lemon juice
06 - 1 teaspoon vanilla extract
07 - 1 1/2 teaspoons pumpkin pie spice
08 - 1 small pinch fine salt

For serving

09 - Ice, for chilled serving
10 - Apple slices or cinnamon sticks, optional

# Instructions:

01 - Add apple cider, pumpkin puree, apricot nectar, maple syrup, lemon juice, vanilla, pumpkin pie spice, and salt to a medium saucepan. Whisk until the pumpkin is fully loosened into the liquid.
02 - Set the pan over medium heat and cook until the juice is steaming, whisking often so the pumpkin does not settle and scorch.
03 - Reduce the heat to low and simmer for 10-15 minutes. The drink should smell fragrant and look smooth and deep orange.
04 - Pour the warm juice through a fine-mesh strainer into a heatproof pitcher if you want a smoother texture. Press lightly and discard the thick solids.
05 - Serve warm in mugs, or refrigerate for at least 2 hours and pour over ice. Stir or shake before serving because pumpkin settles as it sits.
