Dice sweet potatoes, bell pepper and onion. Mince the garlic. Chop fresh parsley for garnish.

Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 3–4 minutes. Add garlic and sauté for 1 minute until fragrant.

Add ground turkey to the skillet. Break meat apart with a spatula and cook until fully browned, approximately 5–7 minutes.

Add diced sweet potatoes and bell pepper. Sprinkle with paprika, cumin, salt and black pepper. Stir to combine all ingredients thoroughly.

Cover skillet and cook for 15–20 minutes, stirring occasionally, until sweet potatoes are fork-tender. Add a splash of water if mixture becomes too dry.

Remove skillet from heat and top with chopped fresh parsley. Serve immediately.
