Ground Beef Pizza Enchiladas (Print version)

Saucy ground beef, pepperoni, ricotta, and mozzarella rolled in tortillas and baked like enchiladas with pizza sauce on top.

# Ingredients:

For the filling

01 - 1 lb (450 g) lean ground beef
02 - 1 tablespoon olive oil, if needed
03 - 1 small yellow onion, diced
04 - 1 green bell pepper, diced
05 - 3 oz (85 g) pepperoni, chopped
06 - 3 cloves garlic, minced
07 - 1 tablespoon Italian seasoning
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon black pepper
10 - 1/3 cup (80 ml) thick pizza sauce
11 - 3/4 cup (185 g) ricotta cheese
12 - 1 cup (115 g) shredded mozzarella cheese

For rolling and topping

13 - 8 large flour tortillas, about 8-10 inches
14 - 1 1/2 cups (360 ml) pizza sauce
15 - 1 1/2 cups (170 g) shredded mozzarella cheese
16 - 2 oz (55 g) pepperoni slices
17 - 1/4 cup (25 g) grated Parmesan cheese
18 - 2 tablespoons chopped fresh parsley or basil

# Instructions:

01 - Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
02 - Cook the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it into small crumbles, until fully browned. Drain excess grease.
03 - Add the onion, bell pepper, chopped pepperoni, garlic, Italian seasoning, salt, and pepper. Cook for 4-5 minutes, until the vegetables soften and the garlic smells fragrant.
04 - Remove the skillet from the heat. Stir in 1/3 cup pizza sauce, ricotta, and 1 cup mozzarella until the filling is thick and evenly combined.
05 - Warm the tortillas briefly so they bend easily. Spoon the filling down the center of each tortilla, roll snugly, and arrange seam-side down in the prepared baking dish.
06 - Spread 1 1/2 cups pizza sauce over the rolled tortillas. Top with mozzarella, pepperoni slices, and Parmesan. Bake uncovered for 20-25 minutes, until bubbly and lightly browned.
07 - Let the pan rest for 5 minutes so the filling settles. Sprinkle with parsley or basil and serve warm.
