Grilled Shishito Peppers (Print Version)

# Ingredients:

01 - Shishito peppers (2 pounds).
02 - Olive oil for drizzling.
03 - Flaked salt.
04 - Fresh lemon (1).
05 - Cotija cheese, crumbled (2-3 tablespoons).

# Instructions:

01 - Preheat grill to highest heat setting.
02 - Toss peppers with olive oil until well coated.
03 - Place on grill pan and cook covered 3-4 minutes.
04 - Toss peppers and grill 2-3 minutes more until blistered.
05 - Top hot peppers with salt, lemon juice and cotija cheese.

# Notes:

01 - Serve immediately while hot.
02 - About 1 in 10 peppers may be spicy.
