Flatten the hot dog buns using a rolling pin. In a small bowl, mix together 2 Tbsp. softened butter, 1/4 tsp. garlic powder, and 1/4 tsp. onion powder. Spread the butter mixture on the outside of each bun.

Working in batches if needed, heat a large skillet over medium heat. Sear the hot dogs, turning occasionally, until they are charred on all sides, about 2 minutes per side.

Place a bun, buttered side down, into the skillet. Top with 1/2 cup of shredded cheddar cheese, a hot dog, a little more cheddar cheese, and one-quarter of the sliced scallions.

Cover the skillet and cook over medium heat until the cheese has melted. Once melted, use a spatula to close the bun around the hot dog.

Repeat with the remaining ingredients to make 4 grilled cheese dogs in total.
