In a mixing bowl, combine cooked white rice with sour cream and mix thoroughly until the rice is coated evenly.

Heat flour tortillas in a dry skillet for 30 seconds on each side, or microwave for 10 seconds, until pliable.

Arrange each tortilla on a flat surface. Evenly spoon on the rice mixture, seasoned beef, nacho cheese sauce, cheddar, mozzarella, and a drizzle of chipotle sauce in the center of each.

Fold in the sides of each tortilla and roll tightly from the bottom up to enclose the fillings completely.

Melt butter or heat oil in a skillet over medium heat. Place burritos seam-side down and grill for 2–3 minutes per side until the tortillas are golden brown and the cheese is fully melted.
