Remove the cores from the green apples and dice them into small pieces. Work quickly as the cut apples will begin to brown when exposed to air.

In a large saucepan, combine the diced apples, still water, and honey. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook for 15 minutes, occasionally pressing the softened apples with a spoon to release more of their juices.

Remove the pan from heat and allow the mixture to cool completely. Once cooled, strain through a fine-mesh sieve into a bowl or pitcher, pressing gently on the solids to extract maximum flavor. Discard the solids.

Pour about an inch (2-3 tablespoons) of the apple syrup into each glass. Top with sparkling water or club soda, add ice cubes as desired, and gently stir to combine.
