# Ingredients:

01 - 3 green apples (such as Granny Smith)
02 - 4 tablespoons honey
03 - 2 cups still water

04 - Sparkling water or club soda
05 - Ice cubes

# Instructions:

01 - Remove the cores from the green apples and dice them into small pieces. Work quickly as the cut apples will begin to brown when exposed to air.
02 - In a large saucepan, combine the diced apples, still water, and honey. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook for 15 minutes, occasionally pressing the softened apples with a spoon to release more of their juices.
03 - Remove the pan from heat and allow the mixture to cool completely. Once cooled, strain through a fine-mesh sieve into a bowl or pitcher, pressing gently on the solids to extract maximum flavor. Discard the solids.
04 - Pour about an inch (2-3 tablespoons) of the apple syrup into each glass. Top with sparkling water or club soda, add ice cubes as desired, and gently stir to combine.
