Greek Yogurt Banana Bread (Print Version)

# Ingredients:

01 - 2 ripe bananas (200 g total)
02 - ⅔ cup (180 g) Greek yogurt (minimum 2% fat)
03 - 1 large egg
04 - ⅓ cup (80 ml) maple syrup or honey
05 - 1 tsp vanilla extract
06 - 1 tsp ground cinnamon
07 - ⅙ tsp salt
08 - 1 ½ cups (150 g) oat flour (or preferred flour)
09 - ½ cup (50 g) almond flour (or more oat flour)
10 - 2 tsp baking powder
11 - ¼ cup (40 g) chocolate chips (optional)
12 - ½ cup (50 g) protein powder (as a replacement for ½ cup flour, optional high-protein option)

# Instructions:

01 - Preheat oven to 350°F (180°C) and line a 20 cm (7.9 inch) loaf pan with parchment paper or grease it lightly with oil.
02 - In a large mixing bowl, mash the bananas and combine with Greek yogurt, egg, maple syrup or honey, vanilla extract, ground cinnamon, and salt. Stir well until the mixture is smooth.
03 - Add oat flour, almond flour (or additional oat flour), and baking powder into the wet mixture. Stir until fully combined. If using, fold in chocolate chips.
04 - If the batter seems too liquid, add a small amount of additional flour. If it is too thick, add a splash of milk. Adjust depending on the size of bananas used.
05 - Transfer the batter to the prepared loaf pan and bake in the preheated oven for 30-35 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
