Preheat oven to 350°F (180°C) and line a 20 cm (7.9 inch) loaf pan with parchment paper or grease it lightly with oil.

In a large mixing bowl, mash the bananas and combine with Greek yogurt, egg, maple syrup or honey, vanilla extract, ground cinnamon, and salt. Stir well until the mixture is smooth.

Add oat flour, almond flour (or additional oat flour), and baking powder into the wet mixture. Stir until fully combined. If using, fold in chocolate chips.

If the batter seems too liquid, add a small amount of additional flour. If it is too thick, add a splash of milk. Adjust depending on the size of bananas used.

Transfer the batter to the prepared loaf pan and bake in the preheated oven for 30-35 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
