Gordon Ramsay's Chicken Salad Sandwich (Print Version)

# Ingredients:

→ Filling

01 - 500g cooked chicken meat (from 1 large roast chicken)
02 - 1 celery stem
03 - 1 green onion stem, finely sliced
04 - 75g walnuts, roughly chopped
05 - 3 tablespoons finely chopped cornichon or dill pickle
06 - 1 tablespoon finely chopped dill

→ Sauce

07 - 160g whole egg mayonnaise
08 - 160g sour cream (or full-fat yogurt)
09 - 2 teaspoons Dijon mustard
10 - 1 tablespoon lemon juice (or white wine/cider vinegar)
11 - ½ teaspoon onion powder
12 - ¼ teaspoon garlic powder
13 - ¾ teaspoon cooking/kosher salt
14 - ¼ teaspoon black pepper

→ Assembly

15 - 20 slices white sandwich bread (preferably day-old)
16 - Salted butter for spreading

# Instructions:

01 - Shred chicken into small pieces using stand mixer or hands.
02 - Mix mayonnaise, sour cream, mustard, lemon juice, onion powder, garlic powder, salt, and pepper until smooth.
03 - Mix sauce with shredded chicken, then stir in celery, green onion, walnuts, pickle, and dill.
04 - Butter both sides of bread slices.
05 - Spread chicken filling on bread and top with second slice. Cut off crusts if desired and slice in half.

# Notes:

01 - Best made with day-old bread
02 - Can refrigerate 15-30 minutes before cutting for cleaner slices
03 - Use 100-130g filling per sandwich
04 - Can add fresh greens like arugula or spinach
