Vegan Potato Soup (Print Version)

# Ingredients:

01 - 1 tablespoon oil.
02 - 1 onion, diced.
03 - 3 garlic cloves, minced.
04 - 2 celery stalks, diced.
05 - 2 medium carrots, diced.
06 - 2 pounds potatoes, chopped.
07 - 1/2 teaspoon dried marjoram.
08 - 1 pinch nutmeg.
09 - 4 cups vegetable broth.
10 - 2 bay leaves.
11 - 1/3 cup dairy-free cream.
12 - Fresh parsley.
13 - Vegan sausage (optional).

# Instructions:

01 - Cook onion 3 minutes, add garlic and other vegetables with spices.
02 - Add broth and bay leaves, simmer 20 minutes until vegetables are soft.
03 - Remove bay leaves. Blend half the soup until smooth.
04 - Combine smooth and chunky portions, add cream, simmer briefly.
05 - Adjust salt and pepper, add optional red pepper flakes.
06 - Garnish with parsley and optional vegan sausage.

# Notes:

01 - Can use any dairy-free cream.
02 - Traditional recipe uses celery root.
03 - Can blend all for fully smooth soup.
