Garlic Parmesan Roasted Shrimp (Print Version)

# Ingredients:

→ Marinade

01 - 4 tablespoons extra-virgin olive oil
02 - 4 garlic cloves, minced or pressed
03 - 1/2 teaspoon dried oregano
04 - 1/2 teaspoon dried basil
05 - 1/2 teaspoon kosher salt
06 - 1/4 teaspoon freshly ground black pepper
07 - Zest of 1 lemon

→ Main Ingredients

08 - 2 pounds shrimp, peeled and deveined
09 - 1/2 cup grated Parmesan
10 - 2 tablespoons chopped flat Italian parsley, for garnish

# Instructions:

01 - In a large glass or plastic bowl, combine olive oil, garlic, seasonings, and lemon zest. Add shrimp and toss to coat. Cover with plastic wrap and refrigerate for 1-3 hours.
02 - Preheat oven to 400°F. Toss marinated shrimp with Parmesan cheese in the bowl.
03 - Transfer shrimp to a 13x9 Pyrex dish or large baking sheet. Roast for about 8 minutes, until shrimp are pink, firm, and cooked through.
04 - Garnish with a drizzle of olive oil and chopped parsley before serving.

01 - Can use frozen shrimp, thawed overnight in refrigerator
