# Ingredients:

For the pork chops

01 - 4 thick pork chops, bone-in or boneless, about 1 inch thick
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon Italian seasoning
05 - 1/2 teaspoon garlic powder
06 - 1/3 cup (30 g) grated Parmesan cheese
07 - 2 tablespoons olive oil

For the cheesy scalloped potatoes

08 - 2 lb (900 g) Yukon gold potatoes, sliced 1/8 inch thick
09 - 2 tablespoons unsalted butter
10 - 4 cloves garlic, minced
11 - 1 cup (240 ml) heavy cream
12 - 3/4 cup (180 ml) whole milk
13 - 1 1/2 cups (170 g) shredded sharp cheddar cheese, divided
14 - 1/2 cup (45 g) grated Parmesan cheese
15 - 1/2 teaspoon dried thyme
16 - 1/2 teaspoon kosher salt
17 - 1/4 teaspoon black pepper
18 - 2 tablespoons chopped fresh parsley, for serving

# Instructions:

01 - Preheat the oven to 375°F. Grease a 9x13-inch baking dish or a similar 3-quart casserole dish.
02 - Pat the pork chops dry. Season both sides with salt, pepper, Italian seasoning, garlic powder, and Parmesan, pressing gently so the cheese clings.
03 - Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side until golden, then move them to a plate. They will finish in the oven.
04 - Reduce the heat to medium. Melt the butter in the same skillet, add the garlic, and cook for 30 seconds. Stir in the cream, milk, 1 cup cheddar, Parmesan, thyme, salt, and pepper until smooth and just melted.
05 - Layer the sliced potatoes in the baking dish. Pour the warm cheese sauce over the top and press the potatoes down gently. Cover tightly with foil and bake for 30 minutes.
06 - Uncover the dish, place the seared pork chops over the potatoes, and sprinkle with the remaining 1/2 cup cheddar. Bake uncovered for 20-25 minutes, until the potatoes are fork-tender and the pork reaches 145°F.
07 - Let the casserole rest for 5-10 minutes before serving. Sprinkle with parsley and spoon some of the creamy potatoes beside each chop.
