Garlic Parmesan Chicken Meatloaves (Print Version)

Mini chicken loaves bursting with garlic, Parmesan, and fresh herbs, baked golden and irresistibly savory.

# Ingredients:

→ Meatloaf mixture

01 - 450 grams ground chicken
02 - 60 grams grated Parmesan cheese
03 - 60 grams breadcrumbs
04 - 15 grams fresh parsley, finely chopped
05 - 3 garlic cloves, minced
06 - 1 large egg, beaten
07 - 1 teaspoon dried oregano
08 - 0.5 teaspoon fine sea salt
09 - 0.25 teaspoon freshly ground black pepper
10 - 60 millilitres whole milk
11 - 2 tablespoons extra virgin olive oil
12 - 25 grams grated mozzarella cheese (optional)

# Instructions:

01 - Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
02 - In a large mixing bowl, thoroughly combine ground chicken, Parmesan, breadcrumbs, parsley, minced garlic, beaten egg, dried oregano, salt, and black pepper.
03 - Add milk to the mixture and mix gently until uniform and cohesive.
04 - Divide mixture evenly and shape into four compact mini loaves. Place each onto the prepared baking sheet, with space between them.
05 - Drizzle each loaf with olive oil. Optionally, sprinkle mozzarella cheese over the tops. Bake for 25–30 minutes, until golden and internal temperature reaches 74°C.
06 - Remove from oven and allow to rest for 5 minutes before serving.

01 - For best texture, avoid overmixing the meat mixture to maintain tenderness.
