Garlic Butter Lobster (Print version)

Sweet lobster tails broiled with lemon garlic butter until tender, glossy, and ready in about 25 minutes.

# Ingredients:

For the lobster

01 - 4 lobster tails, 5-6 oz (140-170 g) each, thawed if frozen
02 - 1/2 teaspoon kosher salt
03 - 1/4 teaspoon black pepper

For the garlic butter

04 - 5 tablespoons (70 g) unsalted butter, melted
05 - 3 garlic cloves, finely minced
06 - 1 tablespoon fresh lemon juice
07 - 1 teaspoon finely grated lemon zest
08 - 1/2 teaspoon paprika
09 - 1 tablespoon chopped fresh parsley, plus more for serving
10 - Lemon wedges, for serving

# Instructions:

01 - Set the broiler to high and position an oven rack about 6 inches from the heat source. Line a rimmed baking sheet with foil.
02 - Pat the lobster tails dry. Use kitchen shears to cut through the top shell lengthwise, stopping before the tail fan. Gently loosen the meat and lift it so it rests on top of the shell.
03 - Stir the melted butter, garlic, lemon juice, lemon zest, paprika, parsley, salt, and pepper in a small bowl. Set aside about 1 tablespoon for finishing.
04 - Place the lobster tails on the baking sheet and brush the exposed meat generously with garlic butter. Broil for 7-10 minutes, until the meat is opaque, pearly white, and lightly browned at the edges.
05 - Spoon the reserved garlic butter over the hot lobster. Sprinkle with extra parsley and serve immediately with lemon wedges.
