# Ingredients:

01 - 2 lb (900 g) Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
02 - 1 1/2 teaspoons kosher salt, plus more for the water
03 - 4 tablespoons (56 g) unsalted butter
04 - 1/2 cup (120 ml) whole milk
05 - 1/4 cup (60 ml) heavy cream
06 - 1/4 cup (60 g) sour cream
07 - 1/2 teaspoon black pepper
08 - 2 tablespoons chopped chives

For the garlic butter beef bites

09 - 1 1/2 lb (680 g) top sirloin steak, cut into 1 1/4-inch cubes
10 - 1 teaspoon kosher salt
11 - 1/2 teaspoon black pepper
12 - 1/2 teaspoon garlic powder
13 - 1/2 teaspoon smoked paprika
14 - 1 tablespoon olive oil
15 - 4 tablespoons (56 g) unsalted butter
16 - 5 cloves garlic, minced
17 - 1 teaspoon fresh thyme leaves
18 - 1/4 cup (60 ml) beef broth, gluten-free if needed
19 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Place the potatoes in a large pot and cover with cold water by 1 inch. Salt the water well, bring to a boil, and simmer for 15-18 minutes until the potatoes are fork-tender.
02 - Drain the potatoes well. Warm the butter, milk, and cream together until steaming, then mash them into the potatoes with sour cream, salt, and pepper. Fold in chives, cover, and keep warm.
03 - Pat the steak cubes very dry. Toss with kosher salt, black pepper, garlic powder, and smoked paprika until evenly coated.
04 - Heat olive oil in a large cast iron or stainless skillet over medium-high heat. Sear the beef in a single layer for about 2 minutes per side, working in batches if needed. Transfer to a plate.
05 - Lower the heat to medium-low. Add butter, garlic, and thyme to the skillet and cook for 45-60 seconds until fragrant. Stir in beef broth and scrape up the browned bits.
06 - Return the beef bites and any juices to the skillet. Toss for 30-60 seconds until glossy and coated. Spoon over the warm mashed potatoes and finish with parsley.
