Funnel Cake Bites: Crispy, Golden Treats (Print version)

Mini funnel cake bites with crisp golden edges, soft centers, and a snowy dusting of powdered sugar.

# Ingredients:

For the batter

01 - 1 cup (125 g) all-purpose flour
02 - 1 teaspoon baking powder
03 - 1 tablespoon granulated sugar
04 - 1/4 teaspoon fine salt
05 - 3/4 cup (180 ml) whole milk
06 - 1 large egg
07 - 1 teaspoon vanilla extract
08 - 1 tablespoon unsalted butter, melted and slightly cooled

For frying and serving

09 - 4 cups (950 ml) vegetable oil, or enough for 2 inches in the pot
10 - 1/3 cup (40 g) powdered sugar, for dusting
11 - Chocolate sauce, strawberry sauce, caramel, or whipped cream, optional

# Instructions:

01 - In a medium bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
02 - In a second bowl, whisk the milk, egg, vanilla, and melted butter until smooth.
03 - Pour the wet mixture into the dry mixture and whisk just until smooth. Let the batter rest for 5 minutes while the oil heats.
04 - Pour oil into a heavy pot to a depth of about 2 inches. Heat to 350°F to 365°F over medium heat.
05 - Transfer the batter to a piping bag or zip-top bag. Snip a small corner and pipe quarter-size loops into the hot oil, working in small batches.
06 - Fry for 60-90 seconds per side, turning gently with a slotted spoon, until puffed and golden brown.
07 - Transfer the bites to a paper towel-lined rack or plate. Dust with powdered sugar while warm and serve right away with optional sauces.

# Good to know:

01 - Best served warm within 10 minutes of frying.
02 - Keep oil between 350°F and 365°F for crisp edges and tender centers.
03 - Batter can be refrigerated for up to 4 hours before frying.
