Funnel Cake Bites Recipe (Print version)

Crisp, fluffy funnel cake bites made with a quick vanilla batter and finished with powdered sugar.

# Ingredients:

For the batter

01 - 1 1/2 cups (188 g) all-purpose flour
02 - 2 tablespoons granulated sugar
03 - 2 teaspoons baking powder
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon fine salt
06 - 2 large eggs
07 - 3/4 cup (180 ml) whole milk, plus 1-2 tablespoons if needed
08 - 1 teaspoon vanilla extract

For frying and serving

09 - 6 cups (1.4 L) vegetable, canola, or peanut oil, for frying
10 - 1/2 cup (60 g) powdered sugar, for dusting
11 - Chocolate sauce or strawberry sauce, optional for dipping

# Instructions:

01 - Set a wire rack over a rimmed baking sheet. Add oil to a heavy pot to a depth of about 2 inches and heat to 350°F.
02 - In a medium bowl, whisk flour, granulated sugar, baking powder, cinnamon, and salt until evenly combined.
03 - In a separate bowl, whisk eggs, milk, and vanilla. Stir into the flour mixture just until combined. The batter should be thick but drop easily from a spoon. Add 1-2 tablespoons milk if needed.
04 - For fluffy bites, drop 1 tablespoon portions into the oil with two spoons. For tiny funnel-style bites, transfer batter to a squeeze bottle and pipe short loops into the oil.
05 - Fry 5-7 bites at a time for 60-90 seconds per side, turning once, until puffed and golden brown. Let the oil return to 350°F between batches.
06 - Lift the bites out with a spider or slotted spoon. Drain briefly, move to the rack, and dust generously with powdered sugar while warm. Serve right away.

# Good to know:

01 - Best served within 10 minutes of frying.
02 - Use a thermometer for the most consistent texture.
03 - Do not fill the pot more than halfway with oil.
