Cheese Stuffed Doritos Recipe (Print Version)

# Ingredients:

01 - 14oz (400g) block of Mozzarella, low-moisture
02 - 6.4oz (180g) bag of Chilli Heatwave Doritos
03 - 4 cups (1 litre) vegetable or sunflower oil for frying
04 - 1/3 cup (50g) flour
05 - 2 eggs, beaten

→ Seasonings

06 - 1 teaspoon smoked paprika
07 - 1 teaspoon cayenne pepper
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon black pepper

# Instructions:

01 - Slice mozzarella into 1/3-inch thick squares, then cut diagonally into triangles to make 24 pieces.
02 - Crush Doritos to a Panko-like texture using a food processor or zip-lock bag. Set up three bowls: first with seasoned flour, second with beaten eggs, and third with crushed Doritos.
03 - Dredge each cheese triangle in flour mixture, then egg, then crushed Doritos. Ensure thorough coating at each stage. Let rest 10-15 minutes.
04 - Heat oil to 180C/350F. Fry in batches for 1-2 minutes until cheese starts to leak. Place on wire rack and sprinkle with salt while hot.

01 - Use low-moisture mozzarella for best results
02 - Double coating is possible but messier - requires extra egg and Doritos
03 - Can be baked or air fried at 200C/400F if cheese is frozen first
