Fried Cheese Stuffed Doritos Recipe (Print version)

Cold mozzarella gets breaded in crushed Nacho Cheese Doritos, fried until crisp, and served hot with ranch or marinara.

# Ingredients:

For the cheese bites

01 - 12 oz (340 g) low-moisture mozzarella block, cut into 24 thick sticks or rectangles
02 - 1 cup (125 g) all-purpose flour
03 - 2 large eggs
04 - 2 tablespoons milk
05 - 6 cups (about 180 g) Nacho Cheese Doritos, crushed into fine crumbs
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon smoked paprika
08 - 1/4 teaspoon black pepper

For frying and serving

09 - 6 cups neutral oil, such as canola or vegetable oil, for frying
10 - Ranch dressing or marinara sauce, for dipping

# Instructions:

01 - Cut the mozzarella into 24 thick pieces. Place on a parchment-lined tray and freeze for 30 minutes, until firm but not rock hard.
02 - Place flour in one shallow bowl. Whisk eggs and milk in a second bowl. Mix crushed Doritos, garlic powder, smoked paprika, and black pepper in a third bowl.
03 - Coat each cheese piece in flour, dip in egg, then press into Doritos crumbs. Dip again in egg and crumbs, pressing well around the edges to seal.
04 - Return the coated cheese to the tray and freeze for 20-30 minutes, until the coating feels firm.
05 - Pour oil into a deep heavy pot, leaving at least 4 inches of space at the top. Heat to 350°F and set a wire rack over a baking sheet.
06 - Fry 4-5 pieces at a time for 45-75 seconds, turning once, until crisp and orange-golden. Keep the oil close to 350°F between batches.
07 - Transfer to the rack and let rest for 2 minutes. Serve hot with ranch dressing or marinara sauce.

# Good to know:

01 - Best served hot within 5 minutes of frying.
02 - Freeze the breaded cheese before frying to reduce cheese leaks.
03 - Makes about 24 fried cheese bites.
