Melt the butter in a medium saucepan over medium heat. Add the diced fruit, brown sugar, cinnamon, and nutmeg. Cook for 8-10 minutes, stirring occasionally, until the fruit softens. Stir in the cornstarch slurry and cook 2 more minutes until the mixture thickens and coats the back of a spoon. Transfer to a plate and let cool completely.

In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold shortening with a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the milk until a soft dough forms. Turn out onto a lightly floured surface and knead 8-10 times. Let the dough rest for 15 minutes.

Roll the dough to about 1/8-inch thickness. Use a 4-5 inch round cutter to cut circles. Re-roll scraps once and cut again. You should get about 8 circles.

Place a heaping tablespoon of cooled filling onto one half of each dough circle. Moisten the edge with water, fold the dough over to form a half-moon, and press the edges with a floured fork to seal tightly.

Heat about 2 inches of vegetable oil in a heavy skillet or Dutch oven to 350 degrees F. Fry the pies in batches of 2-3, turning once, for 2-3 minutes per side until deep golden brown. Drain on a wire rack or paper towels.

Dust the warm pies with powdered sugar or drizzle with glaze. Serve warm or at room temperature.
