Easy Cucumber Bites (Print version)

Crisp cucumber rounds topped with herbed cream cheese, cherry tomatoes, dill, and seasoning for a fresh no-cook appetizer.

# Ingredients:

For the cucumber bites

01 - 2 large English cucumbers, sliced into 1/2-inch rounds
02 - 8 oz (225 g) cream cheese, softened
03 - 1/4 cup (60 g) plain Greek yogurt
04 - 1 tablespoon fresh dill, finely chopped, plus more for garnish
05 - 1 tablespoon fresh chives, finely chopped
06 - 1 teaspoon fresh lemon juice
07 - 1/2 teaspoon garlic powder
08 - 1/4 teaspoon fine salt
09 - 1/8 teaspoon black pepper

For topping

10 - 12 cherry tomatoes, halved
11 - 3 radishes, very thinly sliced
12 - 2 teaspoons everything bagel seasoning, or to taste

# Instructions:

01 - Slice the cucumbers into 1/2-inch rounds. Pat both sides dry with paper towels so the topping sticks and the bites stay crisp.
02 - In a bowl, stir the softened cream cheese, Greek yogurt, dill, chives, lemon juice, garlic powder, salt, and pepper until smooth and spreadable.
03 - Use a small spoon or melon baller to scoop a shallow well from the top of each cucumber round, leaving the bottom intact.
04 - Spoon or pipe about 1 teaspoon of the herbed cream cheese mixture onto each cucumber round.
05 - Top each bite with a cherry tomato half, a thin radish slice, a pinch of everything bagel seasoning, and a little extra dill.
06 - Chill for 10-15 minutes if time allows. Serve cold within 2 hours for the best crunch.
