Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

Layer half the potato slices in dish, season with salt and pepper. Pour one can of soup and half the cream over potatoes.

Add remaining potatoes, soup, and cream. Top with Gruyere cheese and thyme.

Cover with foil and bake 45 minutes. Remove foil, add crispy onions, and bake uncovered 15 minutes until golden.
